From our chefs: Blueberry mojito mocktail

Fruity drinks and warm weather go together. And here’s a non-alcoholic blueberry mojito packed with antioxidants that both kids and adults can enjoy.

Start by making a simple blueberry syrup, then combine that with mint leaves, lemon, lime and seltzer water. This fruity mocktail will remind you that summer isn’t far off.

Start to finish: 25 minutes

Recipe ingredients:

  • 12 ripe blueberries
  • 8 mint leaves, plus 1 sprig for optional garnish at the end
  • 2 fresh limes squeezed, plus 1 additional lime cut in wedges for optional garnish at the end
  • 2 tablespoons blueberry simple syrup (recipe below)
  • Ice cubes to fill glass
  • 3/4 cup club soda or seltzer water

Recipe steps:

At the bottom of a tall glass, lightly mash the blueberries, 8 mint leaves, lime juice and blueberry simple syrup. Add ice cubes to fill glass. Top with club soda and garnish with a lime wedge or sprig of mint. Serve and enjoy!

Blueberry simple syrup:

  • 1 cup blueberries
  • 1 cup water
  • 1 cup agave syrup
  • 1 tablespoon lemon juice

Mix all ingredients in a saucepan. Over medium heat, bring to a gentle boil, stirring often, until syrup is thickened, about 15 minutes. Place in a blender and puree until smooth.
